A Burrito Wrapped In What?!

I have recently had the pleasure of trying the new craze that is a sushi burrito. Now-a-days things in the restaurant industry are getting new unthinkable twists, allowing chefs and owners to really push the boundaries with their choice of food. James Markham is doing just that. He has stirred the pizza industry by creating restaurants like Pieology, Mod Pizza and Project Pie; restaurants that allow you to customize your pizza enjoying experience. Markham is now dipping his fingers in the fish industry, and has created Rolled Up; an amazing and delicious sushi burrito restaurant for every fish loving soul out there.

Located just 15 minutes east of me, in the heart of Hillcrest, Rolled up has proven that it is a top runner in the sushi burrito game (Pokiritto coming in second). When you walk in the door, you are greeted by some of the nicest employees, who clearly love to work there. The set-up is very similar to Chipolte, except a more rustic vibe and less contamination; sorry chiptoltle.

The first thing you see is the rice making machine. I must have looked like a 5-year-old in a candy store, but this machine does amazing things. Throw some rice in the top, and out comes a perfect square of rice, made perfect for your burrito. Like I said, kid in a candy shop, I thought it was pretty darn cool. Then you have to decide if you are going the custom route (too stressful for me) or the specialty route, where the staff has done all the thinking for you. You can also customize the pre-thought out version, just let them know what you want to add or take off. The board also lets you know what they are currently out of, so make sure to take that into consideration when you order.

Each time I have been there, the menu has been a little different. I personally love when restaurants do this, and it allows variation in my belly and my brain. I dislike seeing the same old menu every time, and although you can customize whatever you want, i prefer to not think about what would go well together vs. what wouldn't.

My first ever burrito was the Crunchy Little Guy ($10). Filled with Shrimp Tempura, cabbage, Persian cucumber, krab, blue corn chips, ginger bitchin' sauce, sriracha aioli and eel sauce. One giant explosion in your mouth. The flavors are so delightful together, and the ingredients tasted so incredibly fresh, which is huge for a fish place. The second burrito i tried was the Spicy Little Guy. Inside; spicy tuna, asparagus, tempura shrimp, lettuce, cilantro chili bitchin sauce, blue corn tortilla chips, spicy mayo and eel sauce. Probably the favorite of the two, because i love spicy tuna.

The best part, if you can't decide or make up your mind, you can order it 50/50 and they will actually make each side a different half. I think this is going to be my next order.

Now, for those of you who have not been outside your front door recently, and do not know what Bitchin sauce is, I apologize. The Bitchin sauce is one of my favorite sauces for just about everything. They sell at just about every farmers market, and are now in grocery stores (and sometimes on special in COSTCO). The sauce is gluten free, GMO free and vegan, and range in flavors like Chipolte and Pesto; my favorite is the Cilantro Chili.
